I had a lovely time. It was a lot of work. Everyone had a lovely time. Lots of lessons learned from the potatoes. The yuzu curd pie was also a surprise hit. I think the almond crust for the cranberry tart was my favorite, that was unexpected! I predict more tarts in my future! Maybe a galette!

Related potato pictures. I'd make them again. I would do things slightly differently. The overall recipe would be the same I feel. We had 3 pies. Key Lime pie, yuzu curd pie, cranberry tart. Overall the dinner party was a success, everyone had a lovely time.

This is an unabashedly internet meme recipe. I got the recipe from Poppy Cooks. Poppy is an absolute gem of a British lady. The potatoes were delicious. A little involved, however I would make them again. Unlike other meme recipes.

They should go onto a wire rack and baking sheet. Avoid storing them on a tray in the oven to keep them warm. They will steam themselves in the oven between frying batches of them. That will murder their crunch. The entire point of deep frying them. Oil heat temp regulation needs watching.

I need to be ruthlessly unafraid of offcuts. The shape must be uniform. Cut the ends, cut the tops and edges. Size matters, maybe soon for a little less than an inch per rectangle. Preheat the oil earlier. It's going to take longer than anticipated to deep fry them all. Uniform cooking is ideal.

Our meal was:
1) spiral cut ham with brown sugar glaze
2) green salad
3) Hawaiian macaroni salad
4) rolls
5) 15 hour potatoes

The potatoes... Were educational. First off, less is more. We made two bread loaf tins of potatoes. Compression is key. More weight. Maybe a touch more herbs.

There is also a quality bar and time invested per model formula somewhere. I want to have a painted complete army. If it's x hours per figure. My completion forecasted date is mid 2026, at best. The rank and file I can cut corners on.

I know my feed has been only food lately. Hhhhm. Gotta think.

I will freely and openly admit I need to get faster in my painting technique. Maybe not contrast paints and speed painting. I do tend to paint slow. But I want to do a good job. There's a sorta psychology analogy about loosening up to not choke up to be made.

I mean setting up takes a bit of time. Getting into that headspace as well. Then cleaning up, packing up. Not to mention travel or driving time. I mean the drive to the nerd store is 30min.

So far it's been helpful with the shopping list consolidation. Not having an unpredictable mountain of leftovers is also a blessing. Refrigerator space is at something of a premium lately. I'm going to be baking some pies. Since we are entering pie season. Stay tuned for those later.

Sausage and Portobello Mushroom Ragu over Polenta. This turned out fabulously, I absolutely plan to make this Ragu again.
