The whole point is to deceive the customer. Make things look cheaper than they actually are. Identical to the psychology of pricing things at $4.99.

Tipping culture in North America is abuse, abuse of the employee and abuse of the customer. Why not pay people a decent wage and advertise the actual cost that you will pay on the menu outside? With all the various add-ons like staff welfare it’s just another way to screw the customer.
