Ok, I went for under proofed and got it

30 mins more next time, but really close to the density I wanted

But this have been in the fridge for around 65 hours

Can't cut it til tomorrow though, but because of placement in fridge, it feels much better (last one was good too)

As i was going for a denser bread without huge air bubbles, but still airy, I got to say I am surprised how the end result turned out as I wanted. Practice have helped

It's not "burned," as my daughter said. It's the honey caramelized as expected
