As spring days warm up, sap drips from cut branches. Enzymes convert stored starch to sugar, which is needed for early spring growth. Dissolved sugar in xylem sap draws water into the stem osmotically, creating positive pressure, filling damaged xylem vessels, and allowing sap collection for syrup.
