Discard Loaf:

1c discard
1c purified h20
3c bread flour

Mix discard and h20 and flour. Kneed, adding h2o as needed. Rest for 20mins. 1 set of stretch and folds. Rest for 6hrs. Shape and place in fridge for 13hrs. Bake in Dutch oven at 450 - 30mins with lid on. Then another 30mins with lid off.

100% fresh milled Einkorn sourdough bread.

This one is a survivor, passed through a hydration mistake, very sloppy dough which I thought about throwing it away. End up putting it on the balcony (-1c) for 38h.

I decided to bake anyway and got this amazing thing that I can't describe the flavor.

Best banana bread you’ll ever have

3 Bananas
1/2 Cup Melted Butter
1/2 Cup White Sugar
1/2 Cup Brown Sugar
2 Eggs
1/2 Cup Milk
1 tsp Vanilla
1.5 Cups Flour
1 tsp Baking Powder
1 tsp Baking Soda
1/4 tsp Salt
1/4 tsp Cinnamon
1 Cup Chocolate Chips (optional)

Bake at 355 for 45mins

I will never cease to be amazed by books. Seriously. Just think about it; thousands of people read the same book, but in everyone’s brain’s the characters look different, the setting changes etc. We are all reading the same thing, but it's so unique to each of us.
