On my pizza thing again. 10% starter, 10% Biga (68% hyd.), Autolyse flour and water (1hr). 48 hr in the fridge. Baked in a wood-fired oven at 675-750F. Very good crust taste, per my eaters. (2nd best they’ve tasted).
