I have been on a journey this week making tasso. Took a pretty nice looking boneless pork butt and cured it for three days, covered it in dry rub, and smoked it for a few hours. I can’t wait to add it to my maque choux tomorrow. Cajun cooking is the most American cuisine IMHO.

I don’t know where to buy tasso for my thanksgiving maque choux so I’m making it?! It seems pretty straightforward but this is my first effort at curing. Will report back.

A few months ago a friend of mine asked if she could set up a beehive on my lot because her colony was reproducing so fast. I enthusiastically said yes and it’s been a joy to have them hanging in the garden all summer. Yesterday we got our first honey! Doing stuff with nature is so cool.

One of my dogs is such a good boy, he wags his tail at the same intensity level when he gets scratches and when he sees our other dog getting scratches. Recently he’s started to do the same when I hug my husband and I do not deserve this animal 😭😭😭

I hope a good time has been had by all at Hal’s St. Paddy’s Day Parade in Jackson today. The crowds looked huge and we had a blast throwing trinkets to you. Time shake the glitter off and put my feet up, see you next year!
