Yeah, that's really odd.

If you wanna do MIDI drums (worth the investment), you can get a Roll Limitless (rolllimitless.com/roll-limitle...) or an ACE Adapter (shop.retrocultmods.com/products/ace...).

TLDR: Don't spend money on that official legacy adapter nowadays. Scalpers are bozos. Support small community businesses.

If you have any older instruments, you can get a Minihost (shop.retrocultmods.com/products/min...) or a V3 Adapter (shop.retrocultmods.com/products/v3-...) to plug them up depending on your needs. The V3 adapter is great to get Wii stuff working on newer systems. The Minihost for anything else.

Additionally there's a Riffmaster but, unless you're getting a deal on it, it's absolutely not worth it at $142. It's less capable than the CRKD Les Paul and it will no longer receiver support. www.amazon.com/dp/B0CWN15TRF

Apologies for the incoming wall of text.
You can get a CRKD Les Paul for Xbox One for $134.99 and you can throw in the solo (Rock Band style) neck for an additional $39.99 if you really want the those solo frets. crkd.gg/products/gib...
You can use code "ACAI" to get a bit off the price.

Do other adjacent games like Rock Band or Guitar Hero count in this?

I'm by no means a Fortnite fan but really? This was the thing that made them sell outs, and not the Internet Explorer campaign? Not the Converse one? lol youtu.be/k4ljAi2U8H0

Rock Band 3. It added real instruments with lessons and carried over harmonies. You could have a casual playing regular five fret bass next to someone playing real guitar tablature and a keyboard. It sold poorly because everyone was tired of these games by then due to oversaturation.

The screenshot, thanks to @kevinthetanqw.bsky.social . Make sure you Save Settings and that it finishes before unplugging it and plugging it into the Wii.

The adapter comes with programming software that lets you configure it. Plug it into your PC then change the mode to something like "Wii - Rock Band Guitar", save, then plug it into the Wii. I'll try to get a screenshot soon! I'm also asking @kevinthetanqw.bsky.social (he mains Wii) for more info.

Aw, that really sucks cause Rock Band 2 guitars are really nice. I'd say look into the V3 adapter then so you don't have to buy yet another guitar while still being able to play Rock Band 1 on guitar and on an actual Wii.
