Thanks so much! From memory mine ingredients were pretty similar to yours but I'll definitely try a slightly longer bake with the lid off next time.

In a ceramic pot with a lid (I don't have a proper Dutch oven). Baked approx 30 mins with it on then 15 mins with it off. Sprayed the loaf just before I put it in. I wasn't sure if a tray of water would do much with a lidded pot?
