Caramelized onions & mushies, roasted butternut squash, kasza (buckwheat groats) meal prepped ahead of time. Fry 1-2 eggs to throw on top. Can do something similar except with quinoa, add some black beans, roasted sweet tatos, scrambled eggs. Or swap quinoa for tortillas and make brekkie tacos.
