I guess the PASCAL compiler I wrote in Java for a grad school class was mostly based around the Visitor pattern

in c++ land I just use the STL and then some encapsulation and some polymorphism / indirection to make things flexible but I don't ever feel like I need a Visitor pattern or a ConcreteAdapterFactory and so forth

related, ish: interesting paper I saw recently is that people who are experienced with AI systems are extraordinarily good detectors of AI generated content but people with no experience were no better than random guessing (I think)
