I have a starter, called Stan. He is almost 7. We bake, a lot - but not always something sourdough. He pretty much lives in the fridge. But we've had some really great bakes in January.

mix 240g sourdough starter and 180g water until the starter is dissolved. Add 400g flour, and 5g salt and OO. Mix until no dry flour remains. Its sticky. Rest for 30, then stretch and fold 3 times, then cover and rise to puffy. Then punch down, cover with cello and fridge overnight! Now PIZZA!!
