I have an allergy to wheat, and gave up bread about a decade ago. I blame the glysophate they put on crops. Now make my own red lentil sunflower seed bread that feeds me b/fast for a week. Very flexible - can add in lots for own taste. Let me know if you want it.

Not far behind you sight-wise. If you like chick pea flour you’ll love socca. It’s best to use cast iron, as it needs lots of heat. I also chuck in olives, rosemary, and a soft cheese while it’s setting. Have fun!
