Several years ago I made a Black Velvet with proper Champagne and Guinness. I found it to be a dreadful waste of both very good wine and astoundingly mediocre stout.

If you think Canadian whisky is just light weight, entry level stuff, think again. Canada is today the most exciting whisky market in the world, producing everything from Irish style pot still to single malt, and punchy 100% rye to innovations on the bourbon methodology.
