Castello is a variety (sub-type) of Arabica.
The coffee is fermented for a number of reasons. It helps process the bean to get off the fruit but also adds a number of flavor profiles. This one is sweet, like crisp apples, while maintaining the chocolate flavors throat are common in Colombian coffee
