Odd! I just checked Spanish subtitles and they use She/her, whilst in French and Italian they keep it completely neutral despite the language having as many gendered words.
It could be inferred that the inconsistency is only found within the translators' personal choice, which means it isn't canon.

It was confirmed by Eve Lindley (English VA) that Lest is indeed Trans!

The Voice actors in Spanish, Polish, French, Portuguese and probably many more dubs are all Trans as well :) so it seems like a very deliberate choice.
