Really good and easy if you have the energy to chop shit and throw it in the oven but not enough energy to think

Roast for 35 minutes at 475 f (or 264 c. Or gas mark 9)
Put in bowl
Add whatever liquid you use to make mashed potatoes that fits with ur seasoning (I did broth and more olive oil)
Mash
Serve with chicken except you timed it wrong n now the chicken is baking after the potatoes bc you have a cold

Would need to chop the butter lettuce but I think it would be a nice salad base. Orange vinaigrette on it

Optional salad walnuts

Maybe just seared dandelion greens and broccolini
And turn the rest into a nice salad

Put arugula on
Or butter lettuce
Or hard seared broccolini
Or spinch raw or sautéed
Or seared dandelion greens
