I think it's also important to show delicious failures. This is a dacquoise I planned for a party that never rose, in fact it fell, so I wouldn't take it in public. Later my hubby and I ate some of this tasty flop.

Just came back from a 6-day baking vacation at King Arthur Baking Education Center. I recommend it for a great time (I don't work for them). This is Bagels, Bicolor Croissant, Cardamon Laminated Brioche Rolls, and Herb Yeast Rolls. See 2 other posts for more pics.

Custard-filled Date Cake. The cake is very good, but the Bird's Custard is pretty bland and didn't really penetrate. Next time I'll try scratch-made creme anglaise.

Not every bake is a success. I tried making Bolani and the crust came out dry and pretty bland taste. The filling was good. I guess it's back to my local Afghan restaurant for review and advice. The chickpea and butternut squash stew was delicious.

Horlicks ginger cookies. I had to make several adjustments to the recipe from Horlicks for both the dough and the malty frosting. Adding the chocolate ganache was my idea. Doesn't everyone have ganache just sitting in the fridge waiting to be useful?

Wellness misinformation is "...deeply embedded in veterinary health, too. And there are even fewer guardrails in place to combat it than there are in human medicine. The veterinary wellness industry is growing rapidly, w/ raw pet food alone est'd to double its global market value...by 2030." 🧪😷🛟
The wellness industry is killing animals, spreading disease, and fueling the next pandemic
Cats and dogs are dying because of growth of raw pet food, which might also help create the next pandemic.

Practiced my laminated pastry today with croissants, getting ready for advanced laminated class. But, oops forgot to take a picture. Challenge of laminating in Arizona: quick roll-and-fold, and between steps cold pack on the granite and rolling pin in the freezer.

As an Autoimmune Neurologist -
PLEASE READ THIS 👇

There is a great deal of “autoimmune” and “inflammatory”pseudoscience being hawked to vulnerable individuals who (understandably) hope their condition can be fixed with antimicrobials/infusions/etc.

I am an immunopsychiatric researcher and I approve this message.

The importance of the immune system as an input/output of so many systems is why it is a critical area of work.

But that is also why we need slow, thoughtful science to avoid harm.

Why inflammatory reductionism is a threat to psychiatry (and the rest of medicine)
A new world-view is emerging, one which attempts to explain all manner of ills as the result of inflammation or immune dysfunction. While motivated by some
