in my opinion, Kurt Gödel's incompleteness proof is also such a nice theoretical representation of this quote. Even theoretically, we always have to assume certain things in math are true without ever being able to prove them!

I think machine learning is a great example of this. Neural networks have had so much practical use in the real world, even though we have such a limited understanding of how lots of network architectures learn.

my interpretation: it is often more productive to use mathematical tools by assuming they're true prior to fully understanding them. Understanding 1+1=2 could require hundreds of pages of proofs. If everyone required that level of understanding before using arithmetic, math would be almost obsolete.
