I hosted a potluck last night and in a nod to the thanksgiving season I made pumpkin pie. But I made a vegan version for the first time and it turned out perfectly! (The whipped non dairy cream was also mega good.)

But if, like me, you get home to discover your pumpkin has a dunch, here's a farmer's trick: clean it well with alcohol and then cover the damaged skin with beeswax. It slows moisture/critters from getting into it!
