I was intrigued by @altonbrown.bsky.social ‘s smoked reverse sear steak method and tried with a small porterhouse — seasoned with salt and pepper, then dried in the fridge. It was phenomenal. I’ve been a sous vide guy, but, having recently gotten into smoking, this might be my new favorite steak.
