I just found the PDB I like - and selected the site I want to glycosylate and picked which glycan to put there and voila a structure!

Probably a result of a vicious cycle. Publishing chemistry in high impact journals is nearly impossible, possibly due to not being able to grasp the impact of such chemistry, in turn making it difficult to get funding too. In 2019 Nature published this and you can see how few papers are from Chem.
