Salmon dry rubbed and sous vide mi cuit (110F 30m) followed by a hard sear (400F 2m flesh side 3M skin side) for crispy skin. Probably one of the easiest fool proof ways to make skin-on salmon if you have sous vide equipment.

I made a Tarragon Omelette.

Lordt this is delicious.

I added sharp cheddar, herbs de province, and my own tarragon-infused vinegar. No salt. No black pepper. Nothing else.

Garnished with cilantro and red onion.

I added some chives to my mashed potatoes and then a bit of cheese in the pan to get crispy cheesy edges. This experiment turned out to be quite tasty.
