Similar to how we know how certain things were pronounced in languages with no living native speakers because we have clues about what rhymed, etc. Trying to make language stuff too Weird or involved gets really dicey with voice acting.

There's some really fun stuff you can do with this writing-wise, too. I could not possibly cast some of my characters for less than a trillion dollars because they speak dialects that don't exist. BUT I can leave hints about how differently they pronounce some things.

I was telling one of my kids that it was physically impossible for an ad to play between songs on any of the records I own, and they asked "and you only have to pay for it once?" and you could see how strange that seemed. You cannot overstate how many basic rules of media consumption have changed.
