Cheese update. We cut off a bit to taste it, and declared it delicious. I cut it into chunks and dipped it in soft wax; now it will sit for a few weeks in the coldest room in the house...

Cheese update: It has reduced to 3# 1.5oz. No signs of mold. I've been turning it twice daily; changing to once daily starting tomorrow. If all goes well, I want to cut it into wedges and wax them, then let those age further. Maybe in a month or so... :-)

I scored 3 gallons of close-date whole milk for $1.00 each and made cheese. It came out to 3# 13oz. Next couple weeks daily flipping and salting as it dries. Not sure if I'm going to wax it or not; I had a sliver and it was good. I used yogurt for the culture...

7 half-pints, 16 pints water-bath canned; 2 half-pints and 2 pints (already spoken for) still "live". Cabbage is high in Vitamin C, and sauerkraut was used on early sailing ships to prevent scurvy when fresh fruit wasn't available... Canning kills the probiotics, but the vitamin C isn't hurt.

More Ham Radio... I'm re-designing my low-power "exciter", so I laid out all of the "spares" and wired them together for tweaking (before I make changes to the semi-working one I already have). After doing all of the "dummy load" tests, I connected it to the antenna. I made a 300 mile contact... ;-)

Emptied each into a large bowl, turned it well, then re-packed. Very tasty at this point; lots of liquid. Probably canning next week or so.
