Rules are rules: Cold, cloudy winter days require grapefruit cake. This 2007 cake felt defiant at the time, celebrating grapefruit instead of the usual lemon, but remains a beloved January fixture in my kitchen, perfectly crumbed and not too sweet.

One of my favorite things to make when I think I don't want to cook: spaghetti tangled with intensely seasoned crunchy breadcrumbs and a broken crispy fried egg comes together as a quick, perfect bowl of undiluted comfort. Monday dinner agenda, set.

A clean-out-the-fridge roasted cauliflower salad, the kind of thing I crave endlessly for cooler-weather lunches. This one has charred scallion segments, salted pistachios, chopped dates, and a sharp lemon dressing and it's so utterly inhalable.

An easy, rustic chicken soup for a sleepy day. This recipe has built-in flexibility so you can use what you have on hand, but a few of my favorite things (leeks, lemon, herbs, some heat, and even the most barebones of stocks) make it truly excel.

The most popular appetizer at every party is also the easiest to make. I am anti stuffing the dates (fiddly, takes forever), but pro glazing, and this one with cider vinegar, maple syrup, flaky salt, and aleppo pepper, makes a perfect snack an exceptional one.

Baked brie, my way: A simple, flaky galette dough forms a decadent packet with around a small wheel of brie with sweet-sour jammy red onions under and over the cheese, a paper-thin layer of Dijon, thyme, and a crackle of sesame seeds on top.
