Just smoked a Puerto Rican-style pernil (pork shoulder) on the Weber kettle — no skin, but all the flavor.

Marinated it overnight with garlic, lime juice, olive brine, spring onions, cumin, and stuffed it with honey-fermented garlic and Castelvetrano olives.
