i am sad when a good book is over much in the same way that i am sad when a good meal is over. yes i'd love to continue enjoying the flavor forever, but more food will make me feel sick and not like it as much anymore. i'll just eat the meal again layer. i can reread the book to enjoy it again.
I get sad when I finish a short book that isn't a series but yeah it's super nice to have a clear narrative arc that doesn't take 8 books, even then it feels like a good chunk of series authors can't make a good enough book arc to want me to stick to the series.

my hot take of the day is that not every book you write needs to be a series and in fact most books would be better if you'd just wrap the damn story up and move on. thank you bye.
