Vegan red wine casserole. This is actually leftovers so I added some spinach and tofu today. It’s was amazing and my mum loved it. It’s just onion, garlic and mushrooms fried off, add red wine and stock, reduce, add split peas and marmite for added rich flavour.

Had a lovely day in Bamburgh yesterday on the Northumberland Coast. I could not be bothered to cook when I got back so dressed up some noodles with Tofu, kale, red cabbage, peppers and mushroom.

I’ve not used silken tofu before so I used it for two things, mushroom and kale pasta sauce and a rum and chocolate pot. The pasta sauce was amazing and had a lovely creamy texture. I haven’t tried the pot yet but I taste tested as making. Apart from a little grainy, it’s good.

Dinner last night was crispy smoked tofu, minted peas and spiced rice. I was able to have some leftover rice for lunch today as well but paired with coconut yoghurt and red cabbage. The colours just scream anti-inflammatory!

Don’t let anyone tell you that you can’t eat what you want as a vegan. No-cheese sauce, no problem! I normally blend cashews to make it but forgot to soak them so I used chickpeas instead, with vegan butter, flour, nutritional yeast and hot almond milk. Transferred to pan and let it thicken. Yummy.

Leftover day today. I had sone courgettes and piccolo tomatoes to use which I put with a baked potato, salad and my homemade sauerkraut. I had a bad weekend with too many UPFs so time to reset.
