Made Lobster mac and cheese today. Combined a few of binging with babish's mac and cheese videos into one. #recipe
A bowl of lobster mac and cheese. The sauce is thick and white, there is shelled pasta, and herbs visable. 2 raw lobster tails 1 can of 12 floz evaporated milk 8 oz preshredded white cheddar cheese (must be preshredded with added starch) ½ pound of dry pasta (any bite sized pasta will do) 1 T. Dill weed ½ T. Parsley flakes 1½ T. Paprika Begin by taking the meat out of the lobster tails, and removing the digestive tract. Chop lobster into bite sized pieces. Heat up evaporated milk in a sauté pan on high heat, until a skin has formed on the top. Turn the heat to low, and add in the lobster tail. Gently stir the lobster, keeping a close eye on it's color. Once it is bouncy and no longer translucent, it is ready. Remove lobster from the milk, and put aside on a plate. Bring evaporated milk to medium heat. Whisking constantly, add in the shredded cheese. Continue whisking until sauce has thickened. Turn off the heat, and stir in dill, parsley, and paprika. Heat up the amount of water required for your pasta, and cook until desired doneness. Save about a half cup of pasta water before draining. Add the pasta, pasta water, and lobster to the sauce. Stir together until combined. Serve. Optionally, top with chopped chives.
