Pork loin is $2.99/lb.

I browned panko crumbs, mixed with seasoning, and parmigiana.

I painted the loins with a mayo/dijon mixture, then rolled them in the panko crust mixture. Baked to 145 degrees. Served with dijon garlic aioli sauce, asparagus and white rice.
