In a screenshot from the TOS episode "Mirror, Mirror" we see a goateed variant of Mr. Spock standing aboard the Enterprise. If this evil doppelganger wasn't shocking enough, to his right are some of The Moopets. From left to right, we see Foozie, Kermoot, Miss Piggy, and Janooce. All of which are punk knockoff versions of the Muppets.

This year’s SB menu: Carnitas street tacos with lime cream y arroz con frijoles negros. Oh and some cerveza too

Snow day today so we made smoky biscuits and gravy with cheddar & hot honey
Biscuits and gravy with cheese on top in a bowl. Biscuits were from the ‘splosion tube. Sausage gravy is homemade. No tube sausage meat at the grocery store, so I had to buy links and squeegee the meat out of the casing. Did the 2/2/2 method for the gravy using the leftover frying fat (two tablespoons fat, two tablespoons flour, two cups milk). Added one of my “why use a bunch of a single spice when you can use a bit of five different ones” method to season it using a mix of sweet paprika, smoked paprika, Aleppo pepper, Guajillo pepper, and a sprinkle of cayenne. I should probably just premake a blend of it to facilitate using it while actively cooking. Maybe a project for this afternoon.

Making meatballs like this takes me back to Sunday afternoons in my great-grandmom’s kitchen. Even used Locatelli for authenticity. Not sure what she would’ve thought about the baked cauliflower, but I know she’d be proud of my kitchen talents and the meatball recipe

They’re golden brown but they’re not quite cooked all the way. INGREDIENTS ▢ ½ cup plain breadcrumbs ▢ ¼ cup milk ▢ 2 egg yolks ▢ ½ cup grated pecorino Romano cheese and Parmesan cheese, mixed ▢ 4 garlic cloves, grated ▢ 1 teaspoon salt ▢ 1 teaspoon pepper ▢ 1 pound ground beef ▢ 1 pound ground pork ▢ ¼ cup grated shallot ▢ 1 Tablespoon Italian seasoning ▢ Olive oil ▢ Pot of sauce, gravy, or just salted tomato purée for simmering INSTRUCTIONS Preheat oven to 400°F. Soak breadcrumbs in milk for 5 minutes. Add the egg yolks, cheese, garlic, Italian seasoning, salt, and pepper to the bowl and mash together to form a paste. Mix the beef, pork and shallot together in a large bowl. Add the bread mixture and blend everything together well using your hands. Form into approx 16 1/4 cup balls on a greased or lined cookie sheet. Bake for 20 minutes. Transfer to simmering sauce and simmer for 30 minutes or more till completely cooked. Photo of baked meatballs brewing in red sauce. Simmering them in this finishes them off and keeps them moist and flavorful. Photo of white and purple cauliflower florets baking in the oven. Tossed with olive oil, garlic powder, pecorino Romano cheese, and breadcrumbs. Then topped with more breadcrumbs.

Flux duct has that near-rhyme hilarity to it. My favorite tube though is the one labeled “excess void” because… well yeah. Because can you really have excess void? It’s like bacon.

Famously, this episode is the one that introduced the concept of making a character evil or “evil” by giving them a goatee, which Spock handsomely sports. Kirk is wearing a sleeveless gold vest as only Kirk could or would. Looking quite stylish, Spock is dressed in a pseudo mandarin collared tunic wearing various metals on his chest. Both individuals have gold sashes tied around their waist with weapons attached to them. A phaser for Kirk and a knife for Spock. In this alternate universe the Terran empire exists instead of the Federation and commits acts of brutality up to and including genocide to cement its hold and further its aims. On screen is a closed caption quote from Spock: “Terror must be maintained or the empire is doomed.” While Spock in this universe is inherently evil, he is also as coldly logical as his counterpart in our universe is. He understands fully that the grip of a regime that exclusively uses terror and violence to maintain its position will slip once they are unable or unwilling to keep committing and escalating those acts. Any greater context beyond a hokey 1960s Science Fiction television series canceled after three seasons is left as an exercise for the reader.

2) The best alternative Air Canada could offer me was Wednesday morning: too late!

Couldn’t remember the name “maple syrup” this morning (pre-coffee) so I called it pancake sauce…

Anyways, here’s some pecan chocolate chunk pancakes
