First batch of gazpacho this summer… It’s a variation of José Andrés’ wife’s recipe. Farmer’s market seconds worked beautifully. Used about 3oz of olive oil blended in. Garnish free, except for a splash of olive oil on top.

First try with matcha and white chocolate shortbread cookies from Just One Cookbook.
Not overcooking was tricky with my hot oven. 1/2” worked better for me. As did removing from the sheet sooner. I’d make them again for a not-too-sweet treat.
