While we are talking about pie, this is a good time to mention that several years ago I wrote up my pie recipe and technique as a recipe comic.
PIE IT IS, IN FACT, EASY STEP 1: CRUST 2¼ CUPS FLOUR 2 STICKS COLD BUTTER 1 TBSP SUGAR (OPTIONAL) 1 PINCH SALT ~2 TSPS WATER (WELL CHILLED CUT THE BUTTER INTO SMALL PIECES ADD HALF THE BUTTER TO THE FLOUR USE A PASTRY CUTTER OR TWO BUTTER KNIVES TO COMBINE THE BUTTER/FLOUR MIXTURE EVENTUALLY, JUST USE YOUR FINGERS SQUISH OUT THE LUMPS! WHEN THE MIXTURE RESEMBLES SAND, ADD ½ OF THE REMAINING BUTTER COMBINE AGAIN BUT LEAVE SOME PEBBLE-SIZED LUMPS ADD THE REST OF THE BUTTER, AND COMBINE AGAIN—LEAVING LUMPS AGAIN SPRINKLE YOUR ICE WATER ON IT AND TOSS TOGETHER WITH PASTRY CUTTER (OR TWO FORKS) TOSS SOME MORE! KEEP TOSSING—TILL THE WATER IS EVENLY DISTRIBUTED PRESS INTO A LUMP WITH YOUR FINGERS. IT SHOULD COME TOGETHER EASILY IF NOT: MORE WATER DIVIDE IN HALF, FORM INTO DISKS, AND CHILL DO NOT SKIP THIS STEP! IT MUST REST A ½ HOUR AT LEAST! YOUR DISKS SHOULD HAVE LITTLE BLOBS OF BUTTER VISIBLE WELL THAT SEEMS OVERLY COMPLICATED! WHY SO MANY STEPS? I’M GLAD YOU ASKED! THESE LITTLE, EASY EXTRA STEPS ARE THE TRICK FOR A SUPER-FLAKY PIE CRUST! IT'S SCIENTIFIC SHORTENING, LARD, AND GOOSE FAT ARE ALL PURE FAT. THEY ARE GOOD FOR PIE CRUST IF YOU WANT A CRISP CRUST. BUTTER CONTAINS WATER WHICH IN THE OVEN BECOMES STEAM WHICH, IN YOUR PIE CRUST CREATES FLAKES AND THOSE BUTTER LUMPS? WHEN YOU ROLL YOUR CRUST OUT, THEY SMEAR INTO BUTTER STREAKS, AND MAKE NICE FLAKES. SOME FOLKS SWEAR BY A HALF SHORTENING/ HALF BUTTER PIE CRUST I PREFER ALL-BUTTER BUT IF YOU WANT TO TRY IT, ADD THE SHORTENING FIRST STEP2: FILLING CONFESSION I ALWAYS WING IT. (SORRY) BUT - I STILL HAVE TRICKS! FOR A NICE MELLOWNESS, SWEETEN WITH BROWN RICE SYRUP! NORMALLY I USE HALF BROWN RICE SYRUP, HALF SUGAR, (WHITE SUGAR FOR BERRIES, BROWN SUGAR FOR APPLES & PEACHES) * SORGHUM IS ALSO GOOD! OR BARLEY MALT SYRUP. * HONEY & MAPLE ARE A LITTLE TO STRONG-FLAVORED, THOUGH * TASTE THE FILLING AS YOU GO. IT MELLOWS AS IT COOKS, SO YOUR RAW FILLING SHOULD SEEM TOO SWEET. THICKENING FLOUR AND CORNSTARCH MAKE A GUMMY FILLING. I PREFER MINUTE TAPIOCA. THE BOX WILL TELLYOU HOW MUCH TO USE; I USUALLY USE HALF WHAT THEY SAY. SPICES I ALWAYS ADD SPICE, BUT NOT MORE THAN ¼ TSP. ANYTHING MORE OVERWHELMS THE FRUIT. FOR BERRIES, A PINCH OF CINNAMON OR GINGER IS ENOUGH. FOR APPLES & PEACHES I ALSO LIKE ALLSPICE, CLOVES, NUTMEG, MACE, BLACK PEPPER... YOU NAME IT! (BUT JUST A LITTLE BIT) APPLES THE BEST APPLE PIE IS MADE WITH A MIX OF APPLES * SOMETHING TART, LIKE A GRANNY SMITH * PLUS A SWEET APPLE, LIKE A CORTLAND * AND IF I CAN FIND IT, ONE OF THOSE FRAGRANT APPLES THEY USE TO MAKE HARD CIDER ALSO! IF YOU HAVE SOME OLD CIDER, PUT IT IN A PAN AND BOIL IT DOWN TO SYRUP PUT IT IN YOUR FILLING IT IS REALLY GOOD STEP 3: BAKING PREHEAT YOUR OVER TO 425° FLOUR YOUR COUNTER, ROLLING PIN, AND CHILLED PIE DOUGH ROLL ONE HALF TO ABIUT 2" LARGER IN DIAMETER THAN YOUR PIE DISH FLOP THE CRUST OVER THE ROLLING PIN AND LIFT PUT IT IN YOUR PIE DISH, DRAPING THE EXTRA OVER THE EDGE IF YOUR CRUST BREAKS, DON’T WORRY! SMOOSH IT BACK TOGETHER WITH A LITTLE WATER ROLL OUT THE SECOND HALF OF THE CRUST, LIKE THE FIRST IF YOU USE A LITTLE COOKIE CUTTER TO MAKE DECORATIVE VENTS, EVERYONE WILL BE SUPER IMPRESSED ADD YOUR FILLING PUT THE TOP CRUST ON FOLD YOUR CRUST UP OVER THE EDGE OF THE BOTTOM CRUST, AND TUCK IT IN THE SIDE OF THE PAN WITH YOUR FINGERS, SMOOSH THE EXTRA DOUGH [at the edge of the pie] INTO A ZIG-ZAG. IT WILL ACT AS A DAM AND BE DELICIOUS! SPRINKLE WITH SUGAR PUT IT IN THE OVEN WITH A PAN BELOW TO CATCH DRIPS BAKE AT 425° FOR 15 MINUTES, THEN TURN DOWN TO 375°; BAKE 30-60 MINUTES MORE, TILL THE FILLING IS BUBBLING AND THE CRUST IS GORGEOUS
