Chef, who used to do something else but found out he was better at this
Cooked some Japanese food tonight. Pork belly, slow cooked, lightly brushed with soy & togarashi. I trimmed the ends & cut them into pieces, fried them off & used the rendered fat to cook the egg for my fried rice.

Driving on a back road from Courtmacsherry to Timoleague, you can look out your car window and see a view like this.
If it were a painting you'd probably think it was almost too pretty.

In West Cork, on a road that goes nowhere, is a monument to a man who voyaged to the end of the earth.
It proves that where you're from places no restrictions on where you can go.

I had 15mins between rugby games to cook some food, chicken chow mein was the perfect choice.

Mack Hansen has a lot of truly special talents, but by far and away his most impressive talent is his ability to look like like a roofer from Tubbercurry.

That was Ireland's best try of the night, super kick and contest to set up the play, controlled possession, recycling quickly, forcing Australia to scramble back into defensive position until a gap opens and Doris powers through.
Great conversation from Crowley too.

It says a lot that people are raving about the one tackle that Prendergast made, and saying nothing about the two big ones he missed, we're lucky that only one lead to a try.
We've seen nothing from him we haven't seen before, no sign of improvement in problem areas.

Second half I'd like to see us take the ball to the line more, look to suck in the Australian defence for 3 or 4 phases so when do go wide or kick in behind we have a better chance of getting something from it instead of contesting 50/50s.

Once you set aside the Hansen hatrick hysteria (and he's been superb) this is a 5 point game.
We're not controlling the game, we're living off a few excellent moments.
This is a decidedly average Australian team at the end of a long hard season.
I'd give us a 6

Another sold-out crowd in Cardiff, the loyalty of Welsh rugby fans in the face of continued losses and poor performances combined with the ineptitude and mismanagement of the WRU is truly amazing.
These fans deserve so much more.

If that was my job, I'm not sure I'd wear white gloves
makes me think of robert williams' old rhyme about felching. "a load in the pooper makes retrieving just super!"

90s style cooking with, Chicken Monsieur, chicken breast wrapped in pancetta, then finished with a cheese sauce over the top, then flashed under a grill with some vintage cheddar and served with garlic mushrooms prerequisite potato wedges.

As long as our lineout is an utter shambles we will struggle to implement any sort of game plan no matter who the opposition is.
However, the better the opposition is the more we will be punished for it.

I'm done being impressed by how good a hooker is on the wing or how many tries they score, if you can't throw the ball into the lineout and hit your man, you're no fucking use to us.

Why is no one in the media questioning how Trump claims to know nothing about people receiving presidential pardons for very serious crimes?
There was uproar about Biden supposedly using an autopen to sign pardons, but no one cares that Trump doesn't even know who he pardoned.

If I had any talent for Photoshop, or even a vague idea how to use it, I'd create a picture of a light sabre with a foot-long Subway meatball sandwich for a handle.

Some photos from a deserted Fountainstown beach this morning.
I had the whole place to myself to have a little walk and find a spot to sit for a while.

A take on the famous Rigatoni Al Segreto from Ginos in NYC, by adding homemade Italian fennel, onion & black pepper sausage.
I'm generally against messing around with classic recipes but this really does work. The finely minced sausage complements the sauce.

Some pics from my walk in Fitzgerald's Park on Sunday morning. It's so wonderful to have a beautiful place like this in the heart of the city.
It feels like you're in the middle of the countryside, not the middle of the 2nd biggest city in Ireland.
