I made the quinoa oatmeal this morning and it’s really good. Perfect comfort food in this extreme cold. I like the texture of it. Added cinnamon, maple syrup, and some frozen blueberries.

Wow. I would just assume that the roads are going to be dangerous until it warms up. I hope NC gets a break from these “ historic” weather events for a while.

Almost 70’s! That’s awesome. We are going to get into the 40’s this week, which is warmer than last week, and will hopefully have some melting. ❄️

I feel your pain! Central N.C. had a 3-year long snow drought, not a single flake. Then we had a couple of nice snowfalls last winter and now we are being deluged!
