Took the leftover cinnamon sugar cheese filling and added flax and baking powder to make a sort of English pudding in the oven. Glazed it with a honey syrup, it's actually quite nice! Having it with a second cup of coffee. #ChefJay

A orange-zested cranberry pecan bread studded with tart berry gems and finished with a snowglobe-like crunch on top so perfect it makes me forget every quickbread that came before it (pumpkin who?) and also converted me to enjoying nuts in loaf cakes.

1 pan = 9 bars. 175kcal, 17g net carb, 13g fiber per bar. They turned out much better than I expected! More like a dense quickbread than a commercial nutritional bar. $0.78 per bar at my current grocery prices ($23.40/mo vs $58/mo for commercial version).

Yup, without them we'd all have proper local time and a 'cream tea' would be on barm cakes as nature intended, none of this scottish quickbread nonsense

there are breads that i enjoy making myself — any quickbread, sourdough boules and batards, flatbreads, biscuits etc. — but you’ll never catch me making a baguette or croissant at home. i live a short bike ride from three boulangeries!
a big thing i learned about myself during covid is that i just want to buy a goddamned baguette from the store or the bakery, i literally never want to make the damned thing myself

love muffin and quickbread recipes you can kinda half ass it a bit and they still turn out pretty good, the corn muffin loaf turned out well, you just have to bake it longer than muffins

#Baking #QuickBread yesterday my husband baked from scratch for the first time while I was sleeping! He made a banana, nut, raisin bread and it is delicious. I’m so proud of him.

Chicken pot pie in the oven. Prepping rice for the Instant Pot, and then curry for the Instant Pot, and then making an apple cinnamon yogurt quickbread, and THEN making yogurt in the Instant Pot - look, I know it's passé, but this gadget does good work.

My standard egg sub is flaxseed because of you buy a big thing of flaxseed & only use it as an egg sub you pretty much eternally got an egg sub & it works pretty reliably in cake/muffin/quickbread recipes if you just read “1T flaxseed+3T hot water” anywhere an egg appears

Breakfast isn't the time or the meal order, it's the food imo. That's why we have stuff like "midnight breakfast" and "all day breakfast". What counts as breakfast food varies from person to person. For me, for example it's cold pizza, eggs, and any kind of pancake/waffle/quickbread.

I spent way too long calculating hydration of the new quickbread. It's not like banana bread is hard, I just need a recipe that is modifiable by the banana weight. Bananas aren't constant.

Even GF cornbread isn't that hard, it's a quickbread so it doesn't really depend on the gluten for structure.
