I went all retro yesterday and made a delicious pineapple upside down cake!
I used a coconut yogurt in the sponge - tastes like an edible pina colada!
Oh, and it’s virtually fat free!

I like to try cooking things I’ve never tried before to test the waters - a success here. Salmon en croute with herby cream cheese. Salmon skin crisp and pan fried greens with chilli and garlic.
