Steam Deck is a PC. It's made by a PC company. Much of its functionality, even in game mode (upscaling, Gamescope etc.), is exclusive to the level of control expected from a PC.
And many games just function better fullscreen in game mode, which is why it exists and is so lauded.

Wanted to play SLARPG but for some reason any time I try to launch the game it won't display correctly and just shows a black screen in the window.

We get BBC News Channel free in the BBC app here in Australia. But it’s a non-standard HTML player in a webview, so you actually can’t full-screen it. So if you like watching the news in a tiny window, you’re good; but otherwise, if you wanted to watch video like any other app, in fullscreen, tough.

Got it all connected. Had to use an OSSC because ps1 mode on ps2 turns makes the StarTech show a blank screen once it switches modes.
I do have controllers but decided to use a ps3/ps4 fightstick with a brook converter. I then use OBS to make it fullscreen on my main monitor.
