The rolling station for making lefse. Round balls of potato-based dough is rolled out flat, then cooked on a dry skillet until small brown blisters form. Swedish Meatballs (this is half of them) cooked, and ready to be sauced. They’ll sit in the sauce 6 hours before being packaged. Swedish Meatballs are seasoned with allspice and nutmeg. Salmon ready for the smoker. These filets are treated with olive oil, coarse sea salt, coarse black pepper and scattered with herbs. This is a ‘hot smoke’, and the salmon is quite tender.
