Our own back yard is littered with meth labs, but so far we haven’t seen a task force devoted to cleaning that up. That’s about as horrible a drug as you can get, & most is produced right here at home…in red areas.

CHICKEN AND DUMPLINGS RANDOLPH Prep Time: 2 Hours Yields: 6-8 Servings Chicken and dumplings is one of those great old-fashioned Southern dishes that is often taken for granted. People don't eat this food as much as they used to. Perhaps it's time to resurrect this dish to its prominent place on the Sunday dinner table Ingredients for Chicken: 2(3-pound) broiler chickens 2 medium onions, cubed 2 celery stalks, quartered 1 bell pepper, quartered 1 head of garlic, halved 4 carrots, sliced 2 bay leaves 2 sprigs of thyme 15-20 black peppercorns Method: Cut each chicken into 8 serving pieces. In a large stockpot, place chicken, onions, celery, bell peppers, garlic, carrots, bay leaves, thyme and peppercorns. Cover chicken with lightly-salted water by 2 inches. Bring to a rolling boil, reduce to simmer and cook 1 hour or until chicken is tender. Remove chicken from stock and allow to cool. Bone and tear meat into irregular serving pieces. Set aside. Return bones to stock and cook an additional 30 minutes. Strain and reserve 3 quarts of stock. Ingredients for Dumplings: 2 cups flour 1½ tsps baking powder 3 tbsps shortening * cup buttermilk salt and cracked black pepper to taste ½½ cup diced carrots ½ cup sliced celery * cup sliced green onions * cup chopped parsley for garnish Method: In a separate mixing bowl, combine flour, baking powder and shortening. Fold shortening into flour until mixture resembles coarse meal. Add buttermilk and stir with a folk until ingredients are moist. Season with salt and pepper. Turn dough out onto a lightly-floured surface and knead gently 4-5 times. Cover with a dry cloth and set aside. Return chicken stock to a low boil. Add chicken, carrots, celery, green onions and parsley. While vegetables are poaching, roll dough %-inch thick. Slice or pinch dough into 1-inch squares. Drop dumplings into boiling broth and stir gently after each addition. Reduce heat to low and cook 8-10 minutes or until dumplings are tender. Season broth to taste
