Last night I made a mapo tofu lasagna and it was great! You substitute the ricotta with tofu and then make the mapo tofu sauce and then layer it like a lasagna. I also roasted Szechuan peppercorns for it too. The recipe is here: www.vietworldkitchen.com/blog/2019/12...
