They can be green, but new top growth would look like this generally

They do! It might take a few extra weeks than you might expect. The shoots look like big red or purple leafy worms sticking out of the ground. How warm is it where you are? If the soil is warm and soft where you've planted it you can v carefully check for new growth around the tuber
