A four coffee blend would be heresy or chaos to a lot of roasters, but this is really balanced.

Milk chocolate, pear, marzipan, praline, satsuma. Clean. Round. Impressive long finish.

Currently drinking a delicious washed Honduras from grower/agronomist Katia Duke. The kind of balance I love from the best Central America coffees—round, mellow, with delicately layered vibrance. Stroopwaffle. Melon. Hint of baking spice.

Agreed—a challenging customer service environment plus a lot of small technical details. Lots of folks can't cut it.

it's not that i ever doubted that being a barista was a skilled position, but my year-long effort to try to produce a half-decent latte at home has convinced me that a good barista is easily more skilled than virtually every c-suite executive on the planet

another countertop blend -- a natural Sidamo Ethiopia and a washed Kenya.

Candy-like sweetness, perfectly round, great mouthfeel. Berry jam, hint of lime, jasmine. Chuggable.

already confused by the time change I'm drinking coffee later in the day than I should.

countertop blend of a washed Guatemala sample and a washed heirloom Ethiopia. milk chocolate with a nice Tang citrus note, green grape, date sugar. next release of The Mix will be in this vein.

drinking a sample of a washed Ethiopia. Grind might've been too fine, pour-over went long leading to a slightly astringent finish hurting some of the flavor articulation. A small splash of water to dilute the brew opens it back up again revealing some berry, lime, green tea, excellent florals.

Civet coffee isn't that good, wouldn't score above mid-tier specialty coffee in a blind cupping, and the commercial production and marketing of it is full of ethical lapses and bullshit mythology.

This is just more science-washing of bogus claims.

Starting my day off wrong with the latest lengthy junk science paper attempting to explain the dubious special properties of civet poop coffee. ☕

Bottom line: the critters are better at selecting only ripe cherry and any controlled depulping/fermentation (even a civet's gut) can change flavor.

notes from my fave:
Toffee, cashew creaminess, bit of peach… sweeeetness amping up as it cools. Kraft caramels, Juicy Fruit gum. Delicate. Articulated. Must have.

Pour-over of Tsebel-Chire (washed) - Sidama, Ethiopia ☕
Tea-like, a jasmine floral that carries long into a nice aftertaste, mango, plum, cocoa, slight almond, slight vanilla. Medium body, nice roundness, unusually delicate. Seems to be shining best with a lighter brew ratio (1:18).
