Stocking up on some muffins for quick breakfasts/snacks! I used blackberries and added a pinch of ginger powder & a dash of ground cloves. (Is #BakeSky a thing?) #TasteOfHome #RecipeBook

BAKE: 20 min. per batch YIELD: about 2-1/2 dozen Linda Gilmore, Hampstead, Maryland If you can't decide which berries to use in these delightful muffins, use half raspberries and half blueberries for a berry good treat. 4 cups all-purpose flour 2 cups sugar 1 teaspoon baking powder 1 teaspoon baking soda 1 teaspoon salt 3 cups fresh or frozen raspberries or blueberries 4 eggs, lightly beaten 2 cups (16 ounces) sour cream 1 cup vegetable oil 1 teaspoon vanilla extract 1 In a large bowl, combine the flour, sugar, baking powder, baking soda and salt. Add berries and toss gently. In another bowl, combine the eggs, sour cream, oil and vanilla; mix well. Stir into dry ingredients just until moistened. 2 Fill greased or paper-lined muffin cups two-thirds full. Bake at 400° for 20-25 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks. Editor's Note: If using frozen berries, do not thaw before adding to batter.
