Bucatini alla carbonara with pasta from Pasta Mancini. No guanciale (pork jowl), so I resorted to thick uncured bacon (pork belly). Pasta Mancini is considered the finest artisan pasta made in Italy, produced in the fields where the wheat is grown. And it just happens to be my namesake.
