Been having similar thoughts recently. It's been *checks watch* decades since I've done any real work on a Linux box though so I may just take an old laptop and start getting a feel for the current distributions before making the leap

It gets a lot of flak, but I'm a fan of my prophet rev2 in large part because of that (though it's only bi-timbral).

I'm just starting with Erica Synths' diy modules. Moritz Klein's videos that go with those have been super helpful just to get an understanding of how the different kinds of circuits can work. Been good practice for my very rough soldering skills as well

Assuming by "classical" you don't strictly mean "from the classical period," Debussy's Sarabande from Pour le Piano has always been a personal favorite
