i always assumed it was because i had covid one time a few years ago. it seems like my taste buds worsened after that. there's also the fact that taste buds die over time. i don't know if that helps, but hopefully it gives you some good ideas.

I've been dealing with that myself. i know i've been dealing with a lot of stress over job hunting not going well, so that may be akin to what you're dealing with as well. i have days where nothing has flavor even though i've packed it with tons of spices and herbs.
