Bahahaha fresh out of toddlers. I live near Walla Walla (where the giant walla walla sweet onion hails). It’s a really good region for long-day onions. Palouse soils are basically rock-free and I use raised beds which helps the carrots. But LOTS of gophers and herbicide drift so mixed bag 🫠

Honestly even though I’ve been baking for ages, I guess I’m just not good at it like some haha. If it’s really dense and small, often that’s underproofed from what I’ve learned. Of course there are like a million other potential causes too which makes it hard to pinpoint sometimes. My dough included

Yeah the vat? I never know exactly what folks have to pay but I’ve heard it’s a lot. Wish I could somehow waive those fees 🫠

Ooph. I still struggle but the thing that really helped was keeping the dough warm during bulk. I think I was chronically underproofed for a long time because I was soooo worried I would overproof it. I microwave a cup of water for two minutes and leave it in the closed microwave with the dough.
