Satisfactory & Factorio are both good if you like automation. Also, modded Minecraft! AllTheMods is a great modpack with lots of automation.

Office 365 support "Forms" that may do what you want. You create a form link with specific fields you want filled in that you can then send to users. Each user fills it out and that adds a row to a spreadsheet.
